Before I get into the fall goodies (SO SOON!!), I wanted to post one of my favorite year-round treats. This is an intensely chocolatey cookie, and is actually a slightly healthier option than most cookies and desserts. Now don't get me wrong, I would never call a cookie healthy -- it's a cookie for Pete's sake -- but if you're not compromising flavor, you might as well help yourself out a little. :)
For all the chocolate lovers out there, this cookie has THREE kinds of chocolate: cocoa powder, dark chocolate chunks, AND milk chocolate chunks. The cookies explode with gooey chocolate and chewy pecans; they're soft on the inside, and slightly crunchy on the outside. A perfect treat for when you need some chocolate, and only chocolate will do...

** TRIPLE CHOCOLATE COOKIES **
Makes 2 dozen cookies.
Ingredients
* 1/4 cup butter, softened
* 1/2 cup dark brown sugar
* 1/4 cup granulated sugar
* 1/4 cup canola oil
* 1 egg
* 1 teaspoon vanilla extract
Dry Ingredients
* 1/2 cup all-purpose flour
* 1/2 cup whole-wheat pastry flour
* 1/4 cup unsweetened cocoa powder
* 1/4 teaspoon salt
* 2 ounces coarsely chopped dark chocolate
* 2 ounces coarsely chopped milk chocolate
* 2/3 cup chopped pecans, optional (but highly recommended!)
* Preheat the oven to 350 degrees F.
* In a large bowl, combine the butter and sugars.
* Add the oil and egg, and beat until creamy. Mix in the vanilla.
* In a medium bowl, whisk together the flours, cocoa powder, and salt.
* Add the dry ingredients to the wet ingredients and mix well.
* Stir in the dark chocolate, milk chocolate, and the pecans and mix well.
* Using a tablespoon, form cookies into a ball.
** I rolled some of my cookies in sugar because the cookies aren't too sweet and it gives them a nice texture on the outside. If you would like to do this as well, just add a little plate of sugar, and give them a quick roll before putting them on your baking sheet.
* Bake for 12 minutes.
* Transfer cookies to a rack to cool.
* Add the oil and egg, and beat until creamy. Mix in the vanilla.
